Default Practice with galvaized?

I just removed the forced air furnace from my home. The plenum was made of pretty heave gauge galvanized (hot roll?) steel. I haven't micked it, but it feels like 18 gauge (my dad was retired when he fabricated it, and I suspect it was left-over material from his shop). My question is as I use this material to practice shaping (No, I wont be welding it) how different might I expect it to react from actual 18 gauge CR? Don't want to unlearn later. Any suggestions will be much appreciated.

I tried a piece here once, no problems shaping. Some of the galvanizing flaked off.
