You'll find lots of information here for learning the techniques you're after, as there's always a motorcycle project or two going on at any time. I've got a 78 XS650 over here myself, but I never did get to far with the ideas I originally had in mind for it.
Also, be aware that there's quite a few members here from around the Golden Horseshoe area. We get together for metalshaping events quite frequently these days, as recently as last weekend as a matter of fact.
