Default working stainless

Hello, my primary interest is making a tank out of 304 stainless. I've watched it done by a friend. He did everything by hand except roll the side walls. He did all the welding, cut circles for the top and bottom, knuckled their edges and drew the cones while welding. He also cut out the tank and fit and welded a manway.
I think I can do this but I'd like advice about rolling over the edges so that the top and bottom cones have a rolled over edge. Any tips?
